Happy Thanksgiving!

Happy Thanksgiving to those of you who are celebrating this holiday today. Since living in the United States, it has always been my most favorite holiday: good food, family, friends, warmth, pies, and no gifts! Safe travels to everyone who is out there going from one place to another.

I'll be making an apple pie in a little while. Since we have been vegetarians for the last 20 years, there is no turkey in our oven, which frees the oven up for all kinds of other goodies! Here's our menu:

Stuffing
Mashed Potatoes
Vegetarian Gravy
Baked Sweet Potatoes
Roasted Green Beans with Garlic and Olive Oil
Roasted Butternut Squash with Maple Syrup
Homemade Cranberry Sauce
Corn Casserole
Apple Pie
An abundant table for which we are extremely grateful.

We've had Tofurkey when our vegetarian daughter and son-in-law have been here. An interesting cultural experience. Happy Thanksgiving!

Hi Karin, that is delicious. Out of curosity how do you get enough "protein"? I am a "sort of vegeterian" but I need to learn more about protein complimenting or is that "old school"?

We tried tofurky once and didn't like it. Add to that that I can't eat gluten and it's almost entirely made from gluten.
I am not worried about the protein issue at all...As long as I eat a variety of foods containing protein in the course if one day, I'm good.
Annemarie and I can't have milk, either, so I make the mashed potatoes with unsweetened, plain soymilk...very yummy. And, it has protein in it!

Love your Thanksgiving menu! I had seafood for my part, while DH and son enjoyed their turkey dinners. Everyone was happy.

Olive oil and nuts are great protein sources, delicious too.
